Mutton Do Pyaza Recipe: A Flavorful Punjabi Lamb Curry
Mutton Do Pyaaza (also spelled as “Do Piyaz” or “Two Onions”) is a flavorful curry made with lamb/mutton cooked with onions, tomatoes, and spices. Here’s the step-by-step recipe to make this delicious Mutton Do Pyaaza:
Servings: 4-6 people
Ingredients:
For Marination:
- 1 kg mutton (boneless pieces or shoulder meat), cut into small cubes
- 2 tablespoons lemon juice
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- ½ teaspoon cumin powder
- Salt, to taste
For Cooking:
- Oil or ghee for cooking (about 4-5 tablespoons)
- Onions: 3 large onions, finely chopped (see note on onion preparation below)
- Tomatoes: 2 large tomatoes, diced and pureed (or use canned tomato puree)
- Spices:
- Red chili powder
- Cumin seeds
- Garam masala powder
- Salt
Note: To prepare the onions for the Do Pyaaza recipe:
- Peel the onions and chop them into small pieces.
- Place the chopped onions in a bowl with salt (about 1-2 tablespoons) and mix well to draw out excess moisture from the onions.
- Leave it for about 30 minutes, then squeeze as much water from the onion mixture using your hands or a cloth.
Instructions:
Step 1: Marination
In a large mixing bowl, combine mutton pieces with lemon juice, ginger paste, garlic paste, cumin powder, and salt. Mix well to coat all the meat evenly with this marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Step 2: Cooking Onions
Heat oil in a pan over medium heat (about 4-5 tablespoons). Add cumin seeds and let them sizzle until fragrant.
Add the chopped onions to the hot oil mixture, stirring occasionally. Cook for about 20-25 minutes or until they turn golden brown and start browning around their edges. Remove from heat and set aside.
Step 3: Making Curry
Heat a large pan with more oil if needed (about another tablespoon). Add diced tomatoes (or tomato puree) to the hot oil, stirring occasionally for about 5-7 minutes or until they soften.
Now add cumin seeds to the same pan. Let them sizzle and then add red chili powder and garam masala powder. Stir well and cook for a minute.
Step 4: Adding Marinated Meat
Add marinated mutton pieces (from Step 1) to this mixture, stirring occasionally as it cooks through for about 20-25 minutes or until the meat is cooked thoroughly and the flavors have melded together with onions, tomatoes, and spices. Taste and adjust seasoning if needed.
Step 5: Garnishing
Garnish Do Pyaaza with a sprinkle of garam masala powder on top (optional) before serving hot over basmati rice or naan bread for an authentic experience!
