Ingredients:

  • 1 kg mutton (cut into cubes)
  • 2 tablespoons vegetable oil
  • 2 large onions (finely chopped)
  • 3 cloves garlic (minced)
  • 1-inch piece ginger (grated)
  • 2 large tomatoes (chopped)
  • 2 carrots (sliced)
  • 2 potatoes (peeled and cubed)
  • 1 cup green peas (optional)
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt and black pepper to taste
  • Fresh cilantro (for garnish)

Instructions:

  1. Brown the Mutton:
    • Heat the vegetable oil in a large pot over medium-high heat.
    • Add the mutton cubes and brown them on all sides. Remove the mutton from the pot and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add the onions, garlic, and ginger. Sauté until the onions are soft and golden brown.
  3. Add Tomatoes and Spices:
    • Add the chopped tomatoes and cook until they break down and become a thick paste.
    • Stir in the tomato paste, ground cumin, coriander, paprika, turmeric, and garam masala. Cook for a couple of minutes until fragrant.
  4. Combine Ingredients:
    • Return the browned mutton to the pot. Stir to coat the meat with the tomato and spice mixture.
    • Pour in the beef or chicken broth and bring to a boil.
  5. Simmer the Stew:
    • Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the mutton is tender. You may need to stir occasionally and add more broth or water if it gets too dry.
  6. Add Vegetables:
    • Add the carrots, potatoes, and green peas (if using). Continue to simmer until the vegetables are cooked and the mutton is very tender.
  7. Season and Serve:
    • Season with salt and black pepper to taste.
    • Garnish with fresh cilantro before serving.

Tips:

  • For a richer flavor, you can sear the mutton in batches to avoid overcrowding the pot.
