  • 500 grams mutton (cut into pieces)
  • 2 large onions (finely chopped)
  • 2 tomatoes (pureed)
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies (slit)
  • 1/2 cup yogurt
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • 2-3 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves (chopped, for garnish)
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1-inch cinnamon stick
  • 1 bay leaf

Instructions

  1. Marinate the Mutton:
    • Mix the mutton pieces with yogurt, 1 tablespoon of ginger-garlic paste, turmeric powder, and a little salt in a bowl.
    • Let it marinate for at least 1 hour. For best results, marinate it overnight in the refrigerator.
  2. Cooking the Masala:
    • Heat oil in a large pan or pressure cooker.
    • Add cloves, cardamom, cinnamon, and bay leaf. Sauté for a few seconds until aromatic.
    • Add chopped onions and green chilies. Cook until the onions turn golden brown.
    • Add the remaining ginger-garlic paste and sauté until the raw smell disappears.
  3. Cooking the Mutton:
    • Add the tomato puree and cook until the oil separates from the mixture.
    • Add red chili powder, coriander powder, and cumin powder. Mix well and cook for a couple of minutes.
    • Add the marinated mutton pieces to the pan. Cook on high heat for 5-7 minutes, stirring occasionally, until the mutton is browned.
  4. Pressure Cooking:
    • If using a pressure cooker, add enough water to cover the mutton. Close the lid and cook for 3-4 whistles on medium heat.
    • If using a regular pan, add water, cover, and let it simmer on low heat until the mutton is tender. This may take about 45 minutes to an hour.
  5. Final Touch:
    • Once the mutton is cooked, check the consistency of the gravy. If it’s too thin, cook on high heat until it thickens to your desired consistency.
    • Add garam masala powder and mix well. Cook for another 2-3 minutes.
    • Garnish with fresh coriander leaves.

Serving

Serve hot with steamed rice, roti, or naan.
