Ingredients for Traditional Mutton Masala, “Step-by-Step Mutton Masala Recipe”
- 500 grams mutton (cut into pieces)
- 2 large onions (finely chopped)
- 2 tomatoes (pureed)
- 2 tablespoons ginger-garlic paste
- 2 green chilies (slit)
- 1/2 cup yogurt
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- 2-3 tablespoons oil
- Salt to taste
- Fresh coriander leaves (chopped, for garnish)
- 2-3 cloves
- 2-3 cardamom pods
- 1-inch cinnamon stick
- 1 bay leaf
Instructions
- Marinate the Mutton:
- Mix the mutton pieces with yogurt, 1 tablespoon of ginger-garlic paste, turmeric powder, and a little salt in a bowl.
- Let it marinate for at least 1 hour. For best results, marinate it overnight in the refrigerator.
- Cooking the Masala:
- Heat oil in a large pan or pressure cooker.
- Add cloves, cardamom, cinnamon, and bay leaf. Sauté for a few seconds until aromatic.
- Add chopped onions and green chilies. Cook until the onions turn golden brown.
- Add the remaining ginger-garlic paste and sauté until the raw smell disappears.
- Cooking the Mutton:
- Add the tomato puree and cook until the oil separates from the mixture.
- Add red chili powder, coriander powder, and cumin powder. Mix well and cook for a couple of minutes.
- Add the marinated mutton pieces to the pan. Cook on high heat for 5-7 minutes, stirring occasionally, until the mutton is browned.
- Pressure Cooking:
- If using a pressure cooker, add enough water to cover the mutton. Close the lid and cook for 3-4 whistles on medium heat.
- If using a regular pan, add water, cover, and let it simmer on low heat until the mutton is tender. This may take about 45 minutes to an hour.
- Final Touch:
- Once the mutton is cooked, check the consistency of the gravy. If it’s too thin, cook on high heat until it thickens to your desired consistency.
- Add garam masala powder and mix well. Cook for another 2-3 minutes.
- Garnish with fresh coriander leaves.
Serving
Serve hot with steamed rice, roti, or naan.
