Ingredients

1. For the Marinade:

  • Mutton: 500 grams (preferably boneless, cut into cubes)

  • Garlic: 4-5 cloves, minced
  • Ginger: 1-inch piece, grated
  • Green chilies: 2-3, finely chopped (adjust to taste)
  • Yogurt: 1 cup
  • Cilantro (Coriander leaves): 1/2 cup, chopped
  • Mint leaves: 1/2 cup, chopped
  • Garam masala: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Red chili powder: 1 teaspoon (adjust to taste)
  • Turmeric powder: 1/2 teaspoon
  • Lemon juice: 2 tablespoons
  • Salt: to taste
  • Oil: 2 tablespoons (plus more for grilling)

Optional:

  • Skewers: Wooden or metal (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

Step 2: Preparation

  • In a large bowl, combine the yogurt, minced garlic, grated ginger, chopped onion, green chilies, cilantro, mint leaves, garam masala, cumin powder, coriander powder, red chili powder, turmeric powder, lemon juice, salt, and oil.
  • Mix well to form a smooth marinade.

3. Marinate the Mutton:

  • Add the mutton pieces to the marinade, ensuring they are well-coated.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight for the best flavor.

4. Preheat the Grill:

  • Preheat your grill or oven to medium-high heat (about 200°C/400°F).

5. Skewer the Mutton:

  • Thread the marinated mutton pieces onto the skewers, leaving a little space between each piece for even cooking.

6. Grill the Kebabs:

  • Lightly brush the skewers with oil to prevent sticking.
  • Place the skewers on the grill or in the oven. Cook for about 15-20 minutes, turning occasionally, until the kebabs are cooked through and have a nice char. The internal temperature should reach at least 70°C (160°F).
  • If grilling in the oven, you can also use the broiler for a few minutes at the end to get a nice char.
